Grilled Bacon Beer Jalapeno Poppers

We wanted to create something fun for the grill and friends, but not go through the trouble of breading and frying.  This dish has been a total hit and is a go to every time there is a gathering! Make sure to clean the Jalapenos well or they will be rather spicy.

Ingredients:

          1 Lb. Bacon (We used thick cut on our 2nd round of this recipe and it chopped much better than thin)

          1 Garlic Clove (can use minced jarred garlic but powder just doesn’t do the trick here)

          1-2 Green Onions (We had an extra large one from our garden)

          10-12 Jalapenos (you’re filling them so go big!)

          1/2 Cup Sharp Shredded Cheese

          4 Oz SOFTENED Cream Cheese

          12 Oz Lager Beer

This dish takes a good amount of prep time with chopping ingredients but if you plan your steps out it flows rather smoothly and is an amazingly delicious dish to make for yourself and friends. Can be a meal itself!

– Start with prepping your bacon. We cooked ours in the oven so we didn’t need to watch it while doing other things. If you want to wrap your Jalapenos later, keep some uncooked bacon!

  • Make sure to line your pan with foil for easy cleanup
  • Bake at 400° for about 20 minutes

– In medium pan on medium-low heat, add beer to start reducing it.

  • We want about a 1/4 cup when it’s reduced
  • Takes about 20 minutes
  • Keep an eye on it while chopping other ingredients!

– Prep Jalapenos – Cut in half and then remove all seeds and veins (the parts that stick up). If you want more spice, leave the veins in

– Prep Onion and Garlic – We want these chopped rather fine and tiny

– Bacon should be about done, lets pull it out and start chopping it up as well. These can be slightly larger.

– In large bowl, add ALL ingredients together including reduced beer and mix well

  • This is why softened cream cheese is important
  • Save some bacon and shredded cheese to sprinkle on after cooking

– Once evenly mixed, add to cut out Jalapenos

– Add to grill and cook them up!

– If you want a crispier Jalapeno, try adding just a touch of oil to the bottom before adding to grill
