Drunk & Toasted Salsa

What started as a taco recipe with beer also turned into a fresh salsa recipe using the other part of the can! This is a very simple dish to make. Unlike some of our recipes that require a lot of fine chopping, this recipe you can pretty much just cut small enough for the blender to finish the work for you 🙂

    Will feed quite a few - if making for 1-2 people, cut ingredients by half

Ingredients:

– Pepper (1/4 tsp)

– Salt (1/2 tsp)

– Cumin (1/2 tsp)

– Olive Oil

– 1/4 Yellow Onion

– Garlic Cloves (2)

– Cilantro (1/4 Cup)

– Fresh Squeezed Lime (1)

– Serrano Peppers (2-3)

– Jalapeno (1)

– Tomatoes (6-7, we used Roma)

– Bell Pepper (2, pick  your favorite colors!)

– 8 Oz Beer (we used Oskar Blue’s Mas Lima Cerveza, it’s a Mexican lager with lime and salt!)

This dish does not keep well, so make less if you aren't going to use it within 48 hours!

–  Turn oven to high broil

– Prep peppers

  • Cut in half, then remove the veins and seeds. If you want more of a kick leave some of the Jalapeno veins in.
  • Brush with olive oil – this will help them not burn in the oven and make the peeling process a bit easier.

– Put peppers on a cooking pan and in oven on top rack

– Leave peppers in oven 5-10 minutes until they blacken a bit. We can work on other things while this is cooking

– Chop up rest of ingredients – we can make larger chunks since we will be putting everything in the blender

– For the tomatoes, we want to core them and remove the seeds / extra juice. If we don’t, the salsa will be too runny/watery. Use a small spoon and scoop the inside out

– Peppers should be done – lets remove them then QUICKLY get them into a bowl with some plastic wrap on top. We are are steaming them for a few minutes which helps with the peeling process.

– Skin the peppers – I used a knife and scraped them

– Toss everything into a bowl, then squeeze that lime in and add the beer

– Mix briefly, the blender will do most of the work. We want the bowl in case the blender can’t fit everything

– Add to blender and pulse away! For a thicker chunkier consistency only pulse a little bit (it also helps to make your veggies smaller earlier). If you want a smoother salsa, blend longer

– Enjoy! This recipe does not keep long, so make sure to split ingredients in half if only cooking for 1-2 people
