Guinness Fish & Chips

Such a fun tasty dish, and everyone loved it! I had to hide some to have a snack for later, so I’d call that a win!

    There is a lot of prep. This is a simple to make dish, but prepping takes time! Thankfully, you can prep while waiting for other things

  • Inexpensive

    As long as you aren't cooking as much as we did, this is cheap to make!

  • Simple Ingredients

    A lot of this might already be in your fridge and on your shelves!

Ingredients:

– Fish (We used 4 lbs 

– Potatoes – We used 4 lbs Cod and 1lb shrimp

– Oil – Veggie or Canola is fine, more is better for backup

– 8 cups all-purpose flour

– 1/2 cup cornstarch

– 1/4 cup baking powder

– 1 tbsp black pepper

– 1 tbsp salt

– 8 tbsp Old Bay seasoning

This took some time, but worth every minute (we also made a bunch of fish & chips)

This dish is all about prepping ahead of time and throughout making!

– Prep Potatoes

  • Skin them well
  • Cut into large rectangular chips
  • Add to cold water to remove excess starch – this is key to great frying!

– Heat oil to 375

  • Use large brasier to help with splashing and to cover chips/fish
  • Med – med low (4 on our stove was too hot)
  • It’s important to keep temp steady when adding food and more oil

– Prep dry coating for fish

  • Do this while heating oil
  • Add all dry ingredients (flour, cornstarch, baking powder, salt/pepper, Old Bay)
  • Mix well

– Cook chips

  • Keep monitoring temp!
  • Finish chips completely before adding fish
  • Golden brown – toss in a bowl with favorite seasoning! We used Creole

– Prep fish

  • Remove excess water with paper towels on plate
  • Cut into smaller than hand-size, bigger than bite-size pieces

 – Dust fish with flour mixture

  • A nice solid coating is recommended. put fish right in the bowl!

– Make fish batter

  • Add about 8-10 oz of stout beer
  • Mix until smooth. Thicker is better than runny!
– Fries done yet? Complete this before moving on
 

– Add fish to batter

  • Be gentle. By hand is best
  • Add to bowl so batter doesn’t stay behind on a plate, can cook in batches
  • If you have a helper, have them cook and monitor oil levels/temp while you coat fish to save time!

– Cook fish

  • Remember, 375 at all times!
  • Like the fries we want these to be golden brown
  • Cook about 4-5 minutes per batch
